The Skylark
The Skylark is built around fire, flavour and the kind of atmosphere that makes dinner reservations quietly turn into all-night plans.
Expect Atlantic seafood from Ireland’s West coast, beautifully aged cuts, vegetables kissed by flame. The cooking is rooted in the incredible produce found across Galway and the West of Ireland, working closely with local growers, farmers, fish suppliers and artisan producers who know their craft inside out.
Wine is a huge part of the experience at The Skylark. Curated by Restaurant Manager & Wine Buyer Lily Eloy, the list brings together celebrated bottles, smaller producers, natural wines and unexpected favourites.

The grill glows and the room fills with the energy of people settling in for the evening. Expect beautifully cooked seafood, exceptional steaks, seasonal sharing plates and wines worth lingering over.

The cheese course alone is worth saving room for. Cashel Blue, Oak Smoked Gubbeen, Hegarty Cheddar and a soft goat’s from the Aran Islands.
Beyond that, The Apple, the Fire Pit, a Baba, the PB&J and a Citrus Fusion. Ice creams and sorbets when simple is exactly right.
